Gluten-free Peanut Butter Cup Breakfast Cookies

Hey guys!  Let's face it:  If you're anything like me, you love breakfast.  I'm not the kind of person who can just rush out the door without a solid breakfast.  By solid I mean healthy, easy, filling, and most importantly, delicious.  Today's cookies fit the bill.
