Gluten-free Peanut Butter Cup Breakfast Cookies

Hey guys!  Let's face it:  If you're anything like me, you love breakfast.  I'm not the kind of person who can just rush out the door without a solid breakfast.  By solid I mean healthy, easy, filling, and most importantly, delicious.  Today's cookies fit the bill.

If in your childhood (or adult) dreams, you want cookies for breakfast, your dream is coming true today!  Plus, these cookies are nutritious.  Here's how these cookies taste good but also do good to your body.

1.  The Oats

In addition to adding hearty chew to a cookie or granola , oats pack a serious nutritional punch.  They are rich in fiber and protein and loaded with complex, filling carbs, making them a great choice for breakfast.

2.  The Peanut Butter

Although it is rich in fat, peanut butter , when consumed in moderation, is a great plant-based protein.  It's rich in protein and fat, which makes a little go a long way.  It keeps these cookies rich and in tact.  It also contains vitamin E and niacin. Vitamin E keeps your blood healthy.  Niacin keeps your heart healthy .
