Caprese Salad Bites

Hi everyone!  As sure as sunburns, another sure thing about summer are parties!  And who appreciates people who come to parties empty-handed?  But no one likes the person who always brings the same old thing to parties.  If you're looking for a fun, yet easy party-friendly recipe, then today's recipe is for you!

Have you heard of caprese salad?  (It has nothing to do with capris sun πŸ˜‰!)  Essentially, caprese salad is a salad consisting of tomatoes, basil, and mozzarella cheese.  (AKA my kind of salad πŸ˜‹!)    It makes a great, no-cook side dish for summertime, but not exactly the most party-friendly dish (not finger-food!).  But not to fear-  caprese salad is officially party-perfect after getting a little upgrade.

Since there's so few ingredients to this appetizer, I want to tell y'all the importance of each one.

1.  The Bread

Bread makes this caprese salad perfect for your summertime gatherings by forming a stable foundation for the bite.  Its neutral flavor profile perfectly complements each of the other ingredients in this recipe.  Make sure to find a good, fresh baguette for the most structural integrity and nice textural contrast.

2. The Fresh Mozzarella Cheese

Fresh mozzarella cheese is essential for a few reasons.  First of all, the flavor is incredible; it's not too salty.  Second, the soft and creamy texture of the fresh mozzarella contrasts sharply with the crunch of the toast-  in the most perfect way 😍!   Last of all, its way easier to cut than regular mozzarella, which makes prep for this app quicker and more efficient.  You can find fresh mozzarella cheese at your local grocery store, or you can make your own.

3.  The Tomato

The tomato adds welcome acidity to this creamy snack.  There are so many kinds of tomatoes out there, but I recommend using a variety that yields fairly large slices when cut.

4.  The Basil

The basil adds sweet, herbaceous flavor to this appetizer.  Plus, it makes it look really pretty.  Make sure you use fresh basil leaves to get the best flavor, texture, and presentation.

5.  The Olive Oil

The addition of olive oil to this unconventional snack ties all of the flavors and textures of the dish together by adding some umami-rich fruity, musky flavor.  Make sure to use a good quality olive oil is possible for the best taste.

6.  The Salt

Adding salt heightens all of the wonderful flavors of this appetizer and ties them together like a big bow.

Caprese Salad Bites
  • 12 small baguette slices, toasted
  • 12 slices of tomatoe
  • 12 slices of fresh mozzarella, halved into matchsticks 
  • 12 basil leaves, cut in half lengthwise
  • High-quality olive oil, for drizzling as desired
  • Salt, to taste
1.  On each toasted slice of baguette, place a tomato slice, two cheese matchsticks, and two basil leaf halves.
2.  Drizzle each bite with high-quality olive oil and sprinkle with salt as desired
3.  Enjoy 😊!  Due to the fresh produce in this dish, this appetizer is best eaten right away.
