Hi everyone and happy Friday! Whether it's been a good week or a rough weak, let's face it- we need some cookies! So today, I am re-sharing a post that's been on the blog for a while: peanut butter oatmeal chocolate chip cookies.
Why am I re-posting this recipe, you may ask? Well, first of all, the photography in the original post is, to say the least, lacking π¬. So in today's post, the photography, while not professional, is at least pleasing to the eyes. Secondly, I am reminding all y'all of this recipe because it is so good! Without further adieu, let's get to it!
These peanut butter oatmeal chocolate chip cookies are amazing because they are a fusion of the classic cookie trifecta: oatmeal cookies, chocolate chip cookies, and peanut butter cookies. In case you think that fusing three different kinds of cookies together could result in disaster, let me put your fears to rest by saying that any disaster that this recipe causes will be related to how well your pants fit after chowing down the entire batch of said cookies π!
In all seriousness, though, combining three cookies into one yields an incredible result. Oatmeal cookies are chewy and nutty; chocolate chip cookies are bitter-sweet and decadent; peanut butter cookies are sweet-salty and rich. Therefore, these peanut butter oatmeal chocolate chip cookies are chewy, nutty, bitter-sweet, sweet-salty, and downright decadent π!
While these peanut butter oatmeal chocolate chip cookies are perfectly wonderful all on their own, they are of course elevated to high levels of greatness when paired with a glass of milk or crumbled over ice cream. Peanut Butter Oatmeal Chocolate Chip Cookies
- 2 cups old-fashioned rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup creamy peanut butter
- 1/3 cup unsalted butter
- 1/3 cup brown sugar, packed
- 1/2 cup white sugar
- 2 eggs
- 2 tsp. vanilla extract
- 1 cup dark chocolate chips
1. Preheat the oven to 350 degrees F.
2. In a medium bowl, stir together the oats, flours, baking powder, baking soda, and salt.
3. In a large bowl, beat the peanut butter and butter together until smooth.
4. Add the sugars, eggs, and vanilla extract to the peanut butter mixture, beating until combined.
5. Stir in the oat mixture.
7. Fold in the chocolate chips.
8. Using a 1.5 T. cookie scoop, shape the dough into balls and flatten each ball a little with a fork, putting the balls in 3 rows of 4 on a cookie sheet.
9. Bake in preheated oven for 8 minutes.
10. Enjoy, storing at room temperature for up to 3 days and freezing for at least a month.
