DIY Larabars

Happy Monday everybody!  Need a quick, healthy, and tasty snack?  Today's recipe is the answer!

Have y'all heard of larabars?  I've mentioned them to you already. but they're a pretty trendy food bar these days.  At $2 a pop, you might think that they contain some elusive ingredient.  The truth is, they don't!  In fact, they are basically nuts with dried fruit!  Since they're that simple, you might as well make them at home in case the craving for the fruity and hearty granola bar hits and you don't want to run to the store.

As you can see, these bars a bit expensive, and with good reason; nuts and dried fruit cost money!n  Of course, I wanted to find a way to make these bars at home because, hello, I'm a foodie 😉.  To make the nuts and dried fruit go farther, my mom gave me the idea to add oats to the mix. This

proved to be a great idea!  In addition to the greater amount of these gems that I could make, each bar got the added benefits of extra fiber, protein, and healthy carbs.  Who doesn't like that?!

To give the bars even more nutrition, I added some ground flax seeds to the mix.  Ground flax seeds are rich in omega-3 fatty acids, which are great for cognitive health

However, with the addition of the flax seeds and the oats, there wasn't enough stickiness from the dried fruit to hold the mixture together.  Thankfully, there was an easy fix!  A spoonful of coconut oil added the right amount of "glue" to keep the mixture together.

After flattening out the mixture, chilling it in the fridge, and cutting it into squares, I had the perfect, no-bake, no added sugar power bar!

DIY Larabars
  • 1 cup walnut
  • 1 cup prunes
  • 1 cup dried apricots
  • 1/4 cup ground flax seed
  • 1 cup old-fashioned rolled oats
  • 1 T. coconut oil
1.  In a food processor, blend all the ingredients together until a mixture forms.
2.  On a piece of wax paper, spread and shape the mixture into a square-like shape.
3.  Refrigerate the mixture for at least an hour before cutting into squares
4.  Enjoy, storing in the fridge for up to 4 days and freezing for at least 1 month
