Shortcut Curry Chicken Salad

Hi everyone!  How's your week been?  Mine has been a busy one, so a quick, healthy dinner like today's recipe would be nice!

Have you ever been in scenario where you need a super quick dinner, so you run to your local grocery store, buy a rotisserie chicken, and throw that on top of a salad?  Hopefully you aren't in so big of a rush that you put the whole chicken on top of the salad in a literal sense 😀.  But seriously, that in-a-rush-chicken-on-top-of-your-salad-dinner can can old real quick.  So that's why it's good to have some other rotisserie chicken recipes for those days when cooking a meal isn't an option.

To make this meal as healthy as possible, try to get a good rotisserie chicken.  What I mean by that is, if possible, it's a great option to start with an all-natural chicken that doesn't have any artificial seasonings in it.  It's good to check this because, since you're not making it from scratch, which means you can't control what's in it.  So of course, you want to make sure that what's in it is good!

Then, when making the salad, use light mayo.  Of course, there's nothing wrong with some fat, but when mayo is the main binder in this recipe, it's keeps fat in check to use light mayo.  You still get that creamy, salty richness of mayo, but it a healthier way.  If it worked in this coleslaw, it'll work here.

Then, replace some of the mayo with yogurt.  Guys, it really works.  In addition to cutting out some excess fat, yogurt adds extra protein to the recipe.

Don't be afraid of the curry powder!  It tastes SO good!  What is it with chicken and Indian seasoning?  (Hello chicken tikka masala 😋.)

Shortcut Curry Chicken Salad
  • 3 cups rotisserie chicken, chopped
  • 2 sticks celery, thinly chopped
  • 2 T. red onion, finely chopped
  • 1/2 cup light mayonaise
  • 1/4 cup plain yogurt
  • 1 tsp. lemon juice
  • 1 tsp. garlic powder
  • 1 T. mild curry powder
  • 1 tsp. sriracha chile sauce
  • Salt and pepper to taste
1.  Mix everything together.
2.  Enjoy!  This can be refrigerated, but it's best eaten right away.
3.  If desired, serve with whole wheat naan or it lettuce leaves for a tasty meal!
