Hi everyone! Do any of you need a quick and healthy dinner staple? Then this recipe is perfect for you!
Confession: it seems that I am on bit of a seafood kick lately between this and this, the latter of which can be filled with shrimp. But let's face it: seafood is downright delicious 🦐😋.
Even though seafood is wonderful, it seems that us normal folk don't eat it enough. The excuse: it's expensive! This is a valid point, considering that it costs a pretty penny to buy high-quality fish. But what if I told you that you could eat wild-caught fish on a daily basis without breaking the bank? The catch- it all starts with a can.
Now I know naysayers will object to this claim and say that if something comes from a can, it's ultra-processed junk food. That is completely false and this salmon from my local grocery store proves it. I wouldn't call wild caught Alaskan salmon, seasoned only with salt and packed with healthy fat, filling protein, and nourishing calcium junk. In fact, I'd call it a healthy choice!
This nutritious canned salmon is transformed into a marvelous main dish when mixed with a few simple, nutrient-dense ingredients like eggs, milk, and chopped red bell pepper. Of course, these salmon patties are delicious in their own right, but they become even tastier when topped with sliced avocado and kimchi 😋! (By the way, kimchi is basically Korean-style sauerkraut- spicy, tangy, briny, and downright addictive!) Pair these topped salmon patties with this simple side for a wholesome meal.

Salmon Patties
- 1 15 oz. can salmon (preferably wild-caught Alaskan)
- 1/2 of a medium red bell pepper, diced
- 1/3 1/2 of a white onion, diced
- 2 eggs
- 1/4 cup milk
- 3/4 cup whole wheat bread crumbs
- 1/4 cup cilantro or parsley, chopped
- 3 T. olive oil
1. In a medium bowl, mix all the ingredients except the olive oil together.
2. Form the mixture into patties of desired size.
3. Coat a sauté pan with olive oil.
4. Pan-fry the patties in the prepared pan until golden brown on both sides.
5. Enjoy, storing in the refrigerator for up to 3 days.
