Peanut Butter Cup Ice Cream Pie



Hi everyone!  I know that last Monday I posted these peanut butter cup energy bites, but I can't resist posting another peanut butter and chocolate recipe this Monday.  Today's recipe takes peanut butter and chocolate and combines them through a very delicious vehicle:  pie πŸ˜‹.


Contrary to what you might think, pies don't have to be time-consuming or complicated.  The pie recipe that I'm sharing with you is no-bake and uses easy-to-find store ingredients for a fuss-free dessert.

In my opinion, the crucial part of a pie is a good crust; if the crust has the wrong texture or doesn't taste right, the whole pie is ruined.  This peanut butter cup ice cream pie starts off on the right foot with an Oreo cookie crust.  (Not sponsored πŸ˜‰!)  This crust is not only chockful of chocolate goodness, but it is also pre-shaped, ensuring even thickness in each slice of pie.

The other aspect of this ice cream pie that makes it extra delicious is the addition of extra peanut butter cups.  Although the ice cream I use in this peanut butter cup ice cream pie already has peanut butter cups incorporated into it, I think that supplementing it with peanut butter cups ensures that the creamy, rich peanut butter flavor doesn't drown in a sea of chocolate.  Also, extra peanut butter cups give a bit of welcome textural contrast to each bite of this pie.  Lastly, but by no means least, peanut butter adds extra protein to each slice of pie, so you can totally justify eating this pie for breakfast πŸ˜‰!

No matter when you eat it or how you slice it, this peanut butter cup ice cream pie is guaranteed to please!  Serve each slice with a dollop of whipped cream and a few chocolate shavings to take it over the top!

Today's recipe was adapted from an ice cream pie recipe from my big sister, the ice cream pie queen πŸ‘‘!  That recipe also was used in the making of this pie, which I just realized I posted on the blog almost exactly a year ago!  Maybe that's a sign that posting an ice cream pie recipe should be a last-week-of-August yearly tradition on the blog πŸ˜‰....  Let me know in the comments what you all think about that and some flavor requests!

Peanut Butter Cup Ice Cream Pie

  • 1 chocolate Oreo cookie crust
  • 1-quart chocolate peanut butter Moose Tracks ice cream, slightly softened
  • 1 8-oz. container cool whip
  • 1 cup mini peanut butter cups, coarsely chopped
1.  In a large bowl, stir together the ice cream, cool whip, and peanut butter cups.
2.  Spoon the ice cream mixture into the crust, spreading it out evenly.
3.  Cover the pie and freeze it until completely frozen before eating.
4.  Enjoy, storing leftovers in the freezer.
